You can update the Fabric loader version in the json file in the version folder.
I don't think the java server thing is related to Aristois. I am able to run the mod with 21. You can try changing it in the installation settings though.

Ok, found the mod, Just Enough Items is guilty
Remove all texture packs including programmer art (through vanilla game)
its still an issue, it doesnt work with shaders and idk why.

You have to run the Forge installer from their website and run that profile.
If the forge box is not there then that version is not supported.
