I'm just wondering does Aristois hide only itself or hide the entire fabric loader completely from the server, does plugins detect the client as normal fabric or vanilla during the handshakes when you join a server?

Aristois cant be detected i think. if you use too many hacks then the console and admins will know that ur USING a client but they will nto know which client your using.

Like said above, Aristois can only be detected via specific means such as detectible mods.
Aristois runs a custom version of Fabric (called subsystem) that removes fabric branding. This means that plugins that detect fabric cannot see Aristois running fabric. There's also no way that Aristois itself can be seen, unless you run forge. It shows "Vanilla" both to the server and in the f3 menu.

There are some instances that plugins can find "clients", for example by triggering "." in chat. This is easily bypassable by changing the trigger though.
