I noticed that some Minecraft versions are missing from Aristois (Like 1.16.4), Is there a reason for this?

As new versions are created we stop supporting lesser versions that people do not use. Additionally 1.16.4 and 1.16.5 have the same protocol version, meaning that you can join a 1.16.4 server using 1.16.5.
